I've got a list of blog posts working in my mind and in drafts. I just can't get my act together to finish them. I'm sure that's obvious by the lack of posts but it's summer- it's hot, it's muggy, it's miserable. All I want to do is sit in a freezer and complain about how hot it is. As The Wowie put it, "It's too hot to even be nice anymore". I'm searching for inspiration to blog- I even went out and bought myself a new iMac to try to find it. Hopefully it shows up soon.
All four chickens are laying eggs now. We usually get 3 eggs a day, sometimes 4. The two silkies lay tiny eggs and Louise lays the biggest eggs. Truvy was the last girl to start laying so you can imagine my excitement when I looked in the nesting box one day and saw a beautiful blue/green egg!
We also did a little renovation to their coop but we're not quite done yet. (Another thing that the lazy days of summer have interfered with!)
I started taking the I Still Love Calligraphy course this week. My supplies haven't been delivered yet (I've been using a crappy nib/holder I found at Hobby Lobby) so I'm going to wait to share my thoughts and progress with it!
I'm giving Junior League another try. I'm not 100% sure that it's for the best reason but I really just want to meet people. It's really hard to make friends when you work at home and don't have coworkers (and just in general as you get older and you don't have kids). I feel like we have tons of friends all over the country which is great for traveling but we need some at home too!
I have a serious "House To Do" list going on. It goes on past this photo. I made it about a week ago and have already crossed a few things off....but really, when is this all going to get done? Probably never.
This dressing recipe from Cooking Light has been a go-to this summer. I've served it over sliced heirloom tomatoes with corn, grape tomatoes, and roasted baby potatoes. Add a grilled steak or chicken and it's a perfect summer dinner! I've changed up the original recipe a little bit. I hate buying buttermilk because I never use all of it and I hate the waste so I just skipped it!
3/4 container Chobani plain yogurt (any plain yogurt will do)
2 tablespoons mayo
2-3 tablespoons milk (just to thin it out)
A big handful fresh cilantro, minced
1 tablespoon fresh thyme, minced
1-2 tablespoon apple cider vinegar (according to taste, I happen to love vinegar!)
1 teaspoon minced garlic
Salt & Pepper
Whisk it up and thin it out with more milk or vinegar as needed. Yum!
