Ina's Winter Minestrone

I got Ina's new cookbook, Foolproof, for Christmas.  It was just released and in just a matter of weeks I had read rave reviews about it.  Cookbooks are a funny thing.  I love to collect them but I rarely use them.  I have my own family recipes that I use over and over again and hardly ever open up a cookbook even though I have a cabinet full of them.  I think anyone can write a cookbook nowadays which results in a bunch of mediocre recipes that may or may not even turn out like they're supposed to.  One thing I CAN tell you though is that Ina's cookbooks are amazing.  I have never tried a recipe of hers that I didn't love.  They aren't overly complicated- it's just about using good ingredients and taking your time.


Sunday night I made her winter minestrone and garlic croutons.  I had a butternut squash that needed to be used, a Le Cresuet that needed breaking in, and it was 50 degrees and drizzling.  Perfect, right?  It was a simple recipe and delicious!  Todd will be out of town the first half of the week so I'll be glad to have the leftovers.  If you want the recipe, just google "Ina's Winter Minestrone" but I really think you should go get yourself one of her books.

  1. I got two of her books for Christmas, and I've made the shrimp and fennel. I'm not much of a cook, but I love her recipes! I'll have to try this one soon. I'm really hoping to make her tomato soup and grilled cheese croutons soon (maybe this weekend!).

  2. I received that from my husband as one of my gifts and he made the Jambalaya..delicious and so fresh tasting..I love Ina!

  3. i have two of her cookbooks that I rarely use as well, but the recipes I have made have been great. And I agree too that I love her simple, fuss-free list of ingredients. Your photos look great by the way!

  4. I got this book, too, and couldn't agree more on the collecting cookbooks, rarely using them, but loving everything made by Ina. Going to put this on my first try list from that book while it is still cold here.

  5. I loved this soup! I omitted the pasta (I have a weird thing about pasta in soup) and subbed a bunch of steamed kale I had in the fridge for the baby spinach. Still so delicious! Dell Harper (who was 10 months when I made it) devoured it too!

  6. As a Georgian I hate to say this but I like Ina's recipes much more than Paula Deen. GASP!
