I haven't baked anything in a few weeks so the past few nights I've been flipping through some of my favorite cookbooks trying to find something to bake. I usually start this around 9:30 pm and then I realize I'll probably be washing dishes and cleaning up around 11 pm-- and then I change my mind and just go watch a movie. Last night I stumbled on to this recipe on Pinterest- just a few ingredients, one bowl, chocolate? I can do that. For some reason, cookies are not my thing. I manage to mess them up more often than not but let me tell you- these could not be any easier! They are so, so, so good! The egg whites make them bake up with this almost brownie-like flake crust on top but they're gooey fudge inside. And the next day? They're still gooey inside! These cookies have earned themselves a spot in my recipe box.
{Flourless} Chocolate Chip Fudge Cookies
- 3 cups powdered sugar
- 2/3 cup unsweetened chocolate cocoa powder
- 1/8 tsp. salt
- 2 to 4 large egg whites, at room temperature
- 1 Tbsp. pure vanilla extract
- 1 1/2 cups chocolate chips
2. Mix powdered sugar, cocoa powder and salt in a large bowl.
3. Whisk in vanilla and egg whites. Start with 2 egg whites and add one more at a time until the batter reaches near-brownie consistency.
4. Fold in chocolate chips.
5. Using a 1- 1 1/2 tbsp cookie scoop, drop cookie dough on to cookie sheet.
6. Bake 12-14 minutes until they have a glossy cracked top. (12 minutes was perfect for my oven as I wanted the centers to remain really soft.)
I never did manage to wash the dishes I used. They're still in the sink. I did manage to fill them full of water to "let them soak". That's the excuse I use to justify leaving dishes in the sink for two days. They're "soaking".
ETA: I made another 3 dozen for Todd to take to work and they were apparently gone by 8:45am. He says they're some of the best cookies he's ever had. Pretty bold claim!






Might just have to make these soon...they look positively delish!! Anything with chocolate gets a thumbs-up in my book :)
