
You used to be able to buy caramel microwave popcorn. You'd pop the corn and then pour over the pouch of caramel...it was surprisingly good. Well, I haven't been able to find it in years (except for the box of 40 on amazon and there is no way on God's green Earth that I'm buying 40 boxes of caramel corn)...
So on my unbelievably busy Monday morning ,I decided to make my own caramel corn. I'm some how preparing myself for the day that I'm actually going to have a family to do these things for...for now, I'm just making my own butt bigger.
Two bags of popcorn popped in the microwave (I used the Naturally buttered popcorn...you don't want of that movie theater popcorn. It'll be too soggy)
1 cup light brown sugar
1/2 cup (or 1 stick) butter
1/2 cup light corn syrup
1/2 tsp vanilla
1/2 tsp baking soda
1/4 tsp salt
Preheat oven to 250. Pop your popcorn in the microwave and spead it out over a cookie sheet that you've sprayed with Pam.
Melt the butter, corn syrup, and brown sugar in a pan. Let it bubble for about 5 minutes. Remove from heat and add the vanilla, baking soda, and salt. Drizzle it over the popcorn. Toss. Drizzle, toss, drizzle, toss......(Do you know why Snoop Dogg carries an umbrella? For drizzle my nizzle!) It looks pathetic at this point and you'll feel like a failure...Don't worry the caramel WILL cover the popcorn in about 45 minutes.
Put it in the oven for about 15 minutes, take out, toss lightly, back in oven for 15 min, take out toss, back in oven for 15 minutes.... Take it out and toss for about 15 minutes...it'll start to harden and there you have it! Delicious salty caramel corn! It gets better the longer it sits out on the counter. That and I ran out of large plastic bags and refuse to get out of my pajamas on this awfully busy Monday to go to the store...so on the counter it'll sit.

ReplyDeleteYum! This sounds so good and so easy! I used to love the Act II caremel popcorn and ate far to much of it. When we lived overseas my dad represented the company so we got loads of free boxes. I have not come across it in years and am so glad to have found the perfect solution!
ReplyDeleteMy grandma makes this every year around the holidays. I know that hers takes molasses and she pops the "corn" in a "kettle." YUM!!!

ReplyDeleteI was just expressing my disgust at not being able to find that Orville R. micro caramel pop corn last week. This time of year I love caramel pop corn. Speaking of which, a caramel apple would be good too. Your recipe looks yummy:) I'll have to try this one.

It reminds me of a place in Gatlinburg, TN that makes homemade caramel popcorn and they've got a vent that blows the smell onto the streets/sidewalks so you can smell it as you go by! It draws you in! Maybe my house will smell like that after I make my own.

I can't wait to try this!! I've been looking for a caramel corn recipe. I want to make either caramel apples or caramel popcorn with my daughters to make Halloween gifts for their friends.
ReplyDeleteWe'll probably skip the microwave part - we've rediscovered popping corn on the stove with just a little olive oil and sea salt. All you need is a stockpot and a colander on the top to keep the popcorn from flying out of the pot. My daughters love watching the corn pop. We finish it with real butter. I like getting to keep the popcorn in a cute canister in the pantry. (I know that's so pathetic.)
Mmmm takes me back to when I was younger. My mom use to make me something very similar. Her recipe was:

1 cup brown sugar
1 bag marshmallows (normal size, I think 10oz)
Melt ingredients in a sauce pan over low heat.
Then pour over popcorn.
Enjoy!
I make this but I also add pretzels and honey roasted peanuts. Yummy!
