I'm sorry, did you think it was bathing suit season? I've worn mine once and clearly it was under a shirt while I was fishing. Paula Deen may be the reason for the extra LBS! If you haven't scanned through Paula Deen's Chocolate Celebration in your grocery store check out, well, you have more self control than I do...and your male counterpart must not have a sweet tooth like mine does!
I wish I could show y'all a picture of these bars. SO GOOD. It's almost like a brownie but southern. Duh.
1 1/2 cups all purpose flour
1 1/2 cups brown sugar, divided
1/2 cup softened butter
2 cups finely chopped pecans, divided
2 (8 oz) pkgs cream cheese, softened
1.2 cup sugar
4 large eggs, divided
4 (1 oz) squares semisweet chocolate, melted and cooled
2 tsp vanilla
1/2 cup light corn syrup
1/3 cup butter, melted
1. Preheat oven to 350. Line a 13x9" baking pan with foil and lightly grease foil.
2. In a medium bowl, combine flour, and 3/4 cup brown sugar. Cut in butter with a pastry blender until mixture if crumbly. Stir in 1/2 cup chopped pecans. Press mixture into bottom of prepared pan. Bake for 10 min.
3. In a medium bowl, combine cream cheese and sugar; beat at medium speed with a mixture until smooth. Add 1 egg, beat until combined. Stir in melted chocolate and vanilla until smooth; pour over prepared crust. Bake for 15 minutes; remove from oven and cool for 10 minutes.
4. In a medium bowl, whisk together 3/4 cup brown sugar, corn syrup, melted butter, and remaining 3 eggs. Stir in remaining 1 1/2 cups pecans; pour over cream cheese mixture. Bake for 40 to 45 minutes or until center is set. Cut into squares when cooled.
